Peppers come in a rainbow of colors such as red, green and even black! They are available throughout the year, but are at their best between August and September
Benefits:
Bell Peppers are packed with vitamin C and beta - carotene, powerful defence against free radicals. They also protect you from a number of cancers, heart attaches and strokes due to their high content of vitamin B6 and folic acid, which reduces levels of homocysteine, a substance created in almost every cell of the body. Bell peppers are one of the few sources of lycopene, which protects against cancers of cervix and pancreas.
Tips:
- If the pepper's skin seems waxy, scrub it under a running tap until it looses its lustre
- Create an arrabiata pasta sauce by adding peppers and chilli to a basic tomato sauce
- Stew some peppers with some beef pieces and paprika to create an authentic Hungarian goulash
- Fill your peppers with cheese and cooked rice, then back in the oven until roasted to prefection
- Add colour and taste to a crunchy cucumber salad by using an assortment of red, green and yellow peppers
